Onion Mushroom Pasta

Ingredients

  • 1 White onion
  • Portabello mushroom
    • When cut into 1/2 inch pieces, should have the same amount as the onion.
  • 1 package of Pasta
    • Any kind, doesn't matter. Daniele uses egg pasta.
  • Pecarino (Romano) cheese
    • To taste
  • Salt
    • To taste
  • Red pepper
    • To taste

Steps

  1. Dice up the onion.
  2. Cut the portabello mushrooms into 1/2 inch pieces. The amount of mushrooms should be roughly equal to the amount of onion.
  3. In a pot, start cooking the pasta.
  4. Simultaneously, start frying the onion in a pan with olive oil.
  5. Once the onions cook a bit, add in the portabelo mushrooms.
  6. Add salt and red pepper to taste.
  7. You may need to add water from the pasta to the onion/mushroom mix to keep it from drying out.
  8. Pull out the pasta one minute before it is done.
  9. For the last minute, cook the pasta with the onion/mushroom mix.
  10. Add pecarino on top to taste.
