Ingredients

  • 1 cup of Mixed nuts roughly chopped
  • 1/2 cup of Dried fruits chopped
  • 1/4 cup of Shredded coconut
  • 1/2 cup of Mini butterscotch chips
  • 1/2 cup of All-purpose flour
  • 1/2 cup of Oats
  • 1/4 teaspoon of Cinnamon
  • 1/4 cup of Salted butter, melted
  • 1/2 cup of Dark brown sugar, packed
  • 3 teaspoons of Vanilla extract
  • 1/4 teaspon of Salt
  • 1/2 teaspoon of Baking soda
  • 1 egg

Steps

  1. Highly recommend just raiding your pantry and adding whatever sounds right in roughly these proportions.
  2. Also double this recipe in the same size pan for a fluffier chewy bar!
  3. Toffee Variant: add freeze dried fruit and honey instead of brown sugar.
  4. In a large bowl, mix the chopped nuts, dried fruits, coconut, flour, oats, and cinnamon. See note above about doubling or placing in smaller baking tray to make fluffier bars.
  5. In a separate bowl, mix the melted butter and brown sugar. Next, mix in the vanilla extract, salt, and baking soda. Lastly, whisk in the egg until everything is creamy.
  6. Add the wet mixture to the nuts and fruit and mix well.
  7. Cover the bowl and chill the dough in the fridge for at least 2 hours.
  8. After the dough has chilled, preheat the oven to 350°F.
  9. Press the dough into a metal 9x9 inch pan lined with parchment paper.
  10. Bake for 15-18 minutes until the bars are golden brown and the smell fills your kitchen. Wait for the pan to completely cool before cutting into bars.
