Chicken Tortilla Soup

Ingredients

  • 1.5 - 2.0 lbs of Chicken
  • 32 fl oz of Chicken broth
  • 3 Bell peppers (assorted colors)
  • 16 oz of Half and half
    • Heavy whipping cream works as well.
  • 2 16 oz jars of Salsa
    • Carl recommends making at least one of these a Chipotle salsa.
  • 1 10 oz bag of Frozen peas
    • Frozen corn works as well.
  • 16 oz of Cheddar cheese
  • 1 bag of Tortilla chips
  • 8 oz of Sour cream

Steps

  1. Cut the chicken into ~1/2 inch cubes
  2. Chop bell peppers
  3. Add chicken, bell peppers, chicken broth, salsa, frozen peas, and half & half to the crock pot.
  4. Cook on high for 4 hours or medium for 6 hours.
  5. When serving, add cheddar cheese, crumbled tortilla chips, and sour cream to taste.
